Crockpot Chicken & Mushrooms Recipe (3)

Ingredients

  • 1 1/2 lbs Chicken Breasts
  • 2 tbsp olive oil
  • 16 ounce mushrooms sliced
  • 1 onion diced, medium
  • 2 cloves garlic minced
  • 1 1/2 cups chicken broth
  • 2 tbsp cornstarch
  • salt and pepper to taste
  • fresh parsley chopped ; optional

Instructions

  • In a medium skillet, add oil and chicken. Cook on medium-high heat and sear until brown, flip, and brown the other side. Place in slow cooker.

  • In the same pan, add onion and saute until tender. Add to slow cooker.

  • Place the mushrooms, garlic, and parsley in an even layer over the chicken and onions in the slow cooker. Pour in chicken broth and sprinkle with salt and pepper and cook on low for 4 hours.

  • Remove the chicken from the slow cooker, and add cornstarch to the juices and mushrooms. Whisk until smooth. Return chicken to slow cooker and cook until the gravy is thick about 20 minutes.

  • Serve over rice or pasta!

      1. Arrowroot powder or tapioca starch are allowed as thickeners on Whole30. This recipe sounds delicious!

    I have madethis recipe time and time again. It’s like Thanksgiving dinner, so delicious, comforting and exactly what the body needs. I make adjustments to what I have on-hanf. Sometimes I use flour instead of cornstarch. I double the broth as well. And change up the herbs. Herbs de Provence, I do 3 dashes with the parsley. Love this recipe!!

    Emptying the freezer for the festivities came across a bag of chicken pieces didn’t have the making of a stir fry found this recipe. It was 300g of chicken so adjusted accordingly threw in a celery stick left over from lunch and chopped a carrot. Store cupboard herbs and garlic. Bubbled away while wife dressed the tree served with store cupboard microwave rice. Wife pronounced it ‘very tasty’ Have to agree very 😋 and a quick and easy midweek supper will definitely make again.

      This was so good. Didn’t use breasts used thighs. I had homemade broth and I doubled the mushrooms and the onion’s. Will be making again.

    I love this recipe! I have a big family so I doubled it and it came out just as delicious! I also added some spinach (2-3 cups) I added a bit of heavy cream to the gravy at the end at top off with grated Parmesan cheese when serving. I am not sure if this changes the Whole 30 status of this recipe. This is such a quick and easy to follow comfort food recipe. Thank you for sharing!

    I made this on 26 Nov for my Thai family (I live in Thailand). Used slightly more chicken (3 boneless skinless breasts), half the mushrooms (thought I had more on hand), and a large handful of chopped fresh cilantro (bought on accident) and used tapioca starch in place of cornstarch. Results, excellent dish!!! Worthy of 10 stars in ease of preparation and flavor! I and my family loved this! This will be a regular and I will make using various Asian mushrooms.       Made this for my husband who was absolutely delicious! Quick and easy the only thing I did differently was I used oil infused olive oil and instead of pan-frying the chicken I did it in the air fryer 4 minutes at 400 2 minutes on each side seared it just right.

  7. Great recipe! I was a little short on mushrooms so I added some sliced zucchini, and it worked out great
